We control every stage of production, from the selection of cocoa beans to the moment the chocolate takes shape and aroma , ensuring that the result is an authentic product with traceable origin and unmistakable flavor.

1. Cultivation and Harvesting
Originating in the Amazon Rainforest
It all begins in the Amazon, where around 187 families of small-scale farmers cultivate and harvest wild cacao manually under the shade of native trees, preserving the balance of the ecosystem and keeping biodiversity alive.
The cocoa beans are harvested at the ideal point of ripeness, guaranteeing an intense aroma and complex flavor.

2. Fermentation
The Secret of Flavor
Immediately after harvesting, the cocoa is carefully fermented in wooden boxes for about 5 to 7 days.
This natural process transforms the aromatic profile of the almonds, developing distinct notes.

3. Drying
The Influence of the Amazonian Climate
After fermentation, the almonds are dried. This delicate step preserves the aromatic compounds and ensures that each bean retains its original character, reflecting the Amazonian terroir.

4. Roasting
Where Aroma Awakens
At our factory, the almonds are roasted to enhance the natural notes of the cocoa.
Each variety has its ideal time and temperature, resulting in chocolates with a unique sensory profile: intense, aromatic, and perfectly balanced.

5. Breaking and Grinding into Nibs
After roasting, the almonds are cracked open and separated from their shells.
Cocoa nibs concentrate all the flavor and aroma of the forest, ready to give rise to our chocolate.

6. Grinding
This process releases the natural oils from the cocoa and gives rise to cocoa mass, the base of all our products.

7. Shelling
The Gentleness that Delights
For several hours, the dough is refined and homogenized, in a process that develops a creamy texture and balanced flavor.
Here, every detail is fine-tuned so that the chocolate reaches its full aromatic and sensory potential.

8. Tempering
The chocolate is tempered to achieve the perfect shine, snap, and texture. From here, it will be transformed into our diverse products and flavors.
